Love love love love love this product. One of the very few products I've ever ordered that turned out to be even better than I expected. I have now fallen in love with my knives again because they are just incredibly sharp. The only question I have, and I don't know if it's design or flaw, is the angle of the blade is different when one side is face up versus the other. The explanation for that isn't covered anywhere, so I wonder if it's supposed to be like that, and if not if if there's something I should do to accommodate for the change.

I've bought and tested a bunch of different knife sharpeners over the years. Some are "okay-ish" and make a dull knife less dull. Others "can" do a good job but require a lot of finesse. This one actually works as it's supposed to, I think. Read the directions carefully, especially how to mark the edge with a marker to make sure you're angle is close to what you need. I found that some edges are compound: a shallower taper up the the cutting edge which has a slightly steeper angle. But if you don't rush things and take your time, you'll get good results. Be careful, though! When you flip the knife over to do the other side, pay attention where your hands and fingers are! As the blade gets sharper a careless person can get a cut. But that can be said for any sharpener of method, in my experience.
